
Mr 3 is the Picky Eater of the family. He will politely, yet sternly turn his nose up at foods presented that are not part of his favorite foods list. As mentioned previously, he LOVES avocado, which on it's own is full of nutritious goodness. I make him plain avocado sandwiches for lunch more often than I care to admit. From time to time, I try and take advantage of this love to introduce his palate to tastes he wouldn't usually try and to provide him with a wider variety of nutrients.
I tried offering him a few Spinach leaves with his lunch earlier in the week and he point blank refused. So, I thought I'd get him to eat spinach by pureeing a handful of leaves with some mashed avocado. It worked a treat and he ate his way through a sandwich and muffin tin meal with this wholesome Avocado and Spinach Sandwich Spread.
To prepare the Avocado and Spinach Sandwich Spread, first mash half an avocado until soft.
Pop the avocado into your Mini Food Processor
Turn on the Mini Food Processor
Finally, simply spread onto bread and you're done! This batch of Avocado and Spinach Sandwich Spread covered 6 slices of bread, making 3 sandwiches.
The spinach enhances the flavor of the avocado, becoming a taste sensation even adults will enjoy!
I also included some mini Avocado and Spinach Sandwiches in a Muffin Tin Meal, along with apple bears, and stars of cucumber and green pepper cut into shape with mini cookie cutters.The stars of different vegetables were meant to confuse Mr 3 into trying a little green pepper, disguised as cucumber stars, this little trick didn't work unfortunately. Shouldn't complain considering he DID consume a portion of spinach hidden in his mini sandwiches!

Hee hee - well done! Spinach is SO handy - we put it in everything around here, including pancakes. My girl also won't eat capsicum - but then she won't eat cucumber or avocado either, so I think you're doing pretty well!

DeleteSpinach does mix in so well with many things... never thought to mix with avocado for a sandwich-- sounds good to me!! Just made a "shake" for my kids with frozen banana, coconut milk, spinach, and peppermint extract- tasted and looked like a Shamrock Shake- the kids (and my husband) thought they were getting a special treat!
