Former Fussy Eater Update & Fish Poached in Milk

The past week has been somewhat monumental – my once fussy Mr 4 has started eating more and more new foods. Maybe it was the little reward chart we followed a couple of weeks back, or maybe it was following a number of valuable pieces of advice from French Kids Eat Everything: How Our Family Moved to France, Cured Picky Eating, Banned Snacking, and Discovered 10 Simple Rules for Raising Happy, Healthy Eaters by Karen Le Billon. (A book I highly recommend!)

Whatever the reason, my little 4 year olds food world has started to open up and he has two very proud/relieved/overjoyed parents! Just in the past week he’s openly and willingly eaten parsnip, sweet potato, roast chicken, chicken sausages, porterhouse steak skewers and fish poached in milk. These are all “new” foods which he has tried with little fuss and (mostly) enjoyed.

Onto the Fish Poached in Milk – it’s been a dish I’ve wanted to cook for the family for a while, but in the past, knew it would be met with a frosty reception. So, with all family members now willing to try new things, I decided to go ahead and make it.

I love fish poached in milk, the milk makes the fish less fishy and more flavorful and keeps it super moist – so I couldn’t wait to share this delicious dish with my now reformed fussy eater.

I served the fish in muffin tin meals to the boys and they both tried and ate most of the fish. Also in the muffin tin meal are roasted carrots, roasted potatoes and peas – which, to me, are the perfect accompaniments to Fish Poached in Milk. (The fish looks like cauliflower in the photo, but believe me – it’s fish poached in milk!)

Fish Poached in Milk
1 large boneless, skinless white fish fillet (mine was a little over 400g/14 ounces)
Milk
Salt & Pepper to taste

1. Cut the fish into 4 equal pieces and place in a large frying pan.
2. Pour milk over the fish until it comes half way up the sides of each piece.
3. Turn the heat onto medium and slowly bring up to the boil.
4. Turn the fish over regularly and cook until soft and cooked through.
5. Remove from the milk and serve with your favorite vegetables – we love potatoes, peas and carrots with ours.

Serves 4

Fish Poached in Milk is the perfect dish to entice your kids to enjoy fresh fish. It’s also a lovely meal to enjoy during October Unprocessed.

I’m optimistic that we will go from strength to strength with Mr 4’s eating habits and look forward to introducing him to more and more yummy flavors!
