Real Food On A Budget – Roast Potatoes


In this weeks edition of Real Food On A Budget I’ll be sharing a family favorite dish – Roast Potatoes.

There are numerous roast potato recipes, but our favorite is simply baked whole with a little salt and butter for cooking.

Here are my simple steps to Roast Potatoes:

    1. Preheat the oven 200°C (400°F) and get out an oven proof dish. 
    2. Wash potatoes well to remove dirt and any imperfections and place in the oven proof dish.
    3. Pierce each potato in several places with a fork.
    4. Sprinkle over unrefined sea salt. (where to find unrefined sea salt)
    5. Place in the preheated oven and cook for 25 minutes.
    6. Remove from the oven, turn the potatoes over and dot with butter to help prevent the potatoes from sticking. 
    7. Place back in the oven and cook for another 25 to 30 minutes or until cooked through and crisp. You’ll know they are cooked when you can easily pierce a potato with a fork and are met with little to no resistance from the potato skin.

      Once you have roasted your potatoes, it’s time for the fun part – deciding on your toppings!

      First, Choose a protein option:

      • Tuna
      • Cooked Bolognaise
      • Cooked Beans/Legumes

      Next, choose a vegetable or selection of vegetables, either raw or lightly cooked:

      • Chopped Onions
      • Chopped Mushrooms
      • Chopped Capsicum
      • Corn
      • Peas 

      Then, pick a saucey type ingredients:

      • Sour Cream
      • Plain Natural Yoghurt
      • Cream Cheese
      • Cottage Cheese
      • Mashed Avocado
      • Peanut Butter – this may be a bizarre roast potato topping, I learned this one from Nigella Lawson in How To Eat and tried it on the kids a while back – they (and my Husband) LOVE peanut butter on roast potatoes. So, it’s one of those “don’t knock it till you try it” instances… give it a try and let me know what your family think! Here’s a look at the kids roast potato topped with peanut butter:

      Finaly, top with one or a combination of the following:

      • Grated Cheese
      • Parmesan
      • Salt & Pepper
      • Herbs & Spices
      • Garlic

      As you can see, there are endless roast potato topping combinations. A personal favorite of mine is tuna and sour cream:
