A couple of updates about the eBook – as I’ve been working on recipes for the eBook I’ve found that virtually all of them have been grain free. So, I’ve decided to keep the whole eBook grain free! Even though we are a grain eating (and loving) family, I find that our dinners are virtually all grain free, as a result of our progression through The GAPS Diet. Grain Free Dinners work for us and so why change things?

Just like these Honey Roasted Chicken Wings. They can be enjoyed as part of a grain free diet with your favorite veggie or carby side or even with a side of rice or potatoes if those agree with you.

The other update relates more indirectly with the eBook, in particular with the delayed launch date. I had REALLY hoped to bring the eBook to you in October, now I’m hoping for November and the delay is for a good reason…

Today, I’m proud to say that my Husband and I signed the lease to open an Osteopathy Clinic here in Melbourne. He’s an Osteopath and we have spoken of opening our own clinic for AGES, but wanted to wait until the kids were a little older, knowing the enormous commitment of running our own clinic.

Well, an opportunity presented itself a couple of months ago and we’ve been working out how we will make it work and negotiating with tradespeople etc. I’ve been wanting to share the news with you but wanted to wait until we signed the lease and have the keys – which happened today!

So, the time I have meant to be focusing on the eBook has been shifted to everything involved with starting our clinic.

Of course I have still had to cook meals, so I’ve been furiously testing and re-testing recipes to be included in the eBook but I’m still a little way off launching – I’m hoping for sometime in November, but then that just may change – just know it’s  still coming! Thank you for your patience.

Now – onto the recipe! The whole family went CRAZY for these! Both my kids insisted they go in the book (which is a true sign of a successful dish) and it’s become a firm family favorite. The bonus being that it costs next to nothing.

Here I served the Honey Roasted Chicken Wings for the kids in a bento inspired meal, along with cucumber slices, tomato pieces, banana slices and kiwi pieces. I also included a few cute food picks to entice the kids – not that they needed any convincing to devour the yummy meal! (Where to find cute food picks)

Honey Roasted Chicken Wings Bento Lunch Box Meal

Honey Roasted Chicken Wings Recipe

Serving Size: 4

Ingredients

Instructions

  1. In a bowl, mix together the honey, tamari, salt and apple cider vinegar to form a marinade.
  2. Place the chicken wings in an oven proof dish and pour over the prepared marinade and stir to combine.
  3. Place in the fridge to marinate for at least 4 hours or overnight, turning the chicken occasionally to re-distribute the marinade amongst the chicken.
  4. When you're ready to cook the chicken, preheat the oven to 180°C/350°F.
  5. Once the oven has reached the temperature, place the prepared chicken wings into the oven.
  6. Cook for 20 minutes then remove from the oven, turn over and cook for a further 20 to 25 minutes or until golden and cooked through.
