The other day on Facebook, I asked the question “Which do you prefer – tea, coffee or hot chocolate?” Most answered with Hot Chocolate… and it got me thinking about having a little fun with hot chocolate flavors and so I bring you Mint & Coconut Hot Chocolate.

My Husband dislikes Mint in Chocolate of any form, though he does love mint tea and mint sauce with lamb. Whereas I prefer mint in sweet dishes as opposed to savory ones. Hmmm maybe that’s where the kids get their picky eating habits from? Although really, having a mint consuming preference can hardly be classified as picky eating, don’t you think?

So, the recipe makes enough for one – simply double it for an indulgent drink for two and triple it for three – easy!

The ingredients in the recipe can all be stored in your pantry, meaning you can whip up a batch of this minty hot chocolate at a moments notice…

A quick note about the arrowroot powder – I adore hot chocolates that have been thickened with a little arrowroot, making them almost hot chocolate puddingey. (where to find arrowroot powder)

If you’d prefer your hot chocolate smoother and more milky, or if arrowroot doesn’t agree with you, then go ahead and leave it out – it will still be delicious!
