Orange Poppy Seed Muffins
My love for Orange Poppy Seed Muffins goes way back to when I was a teenager. I worked in a food court which included a cafe which rotated it’s muffin varieties.
I relentlessly stalked the cafe on an (almost) daily basis, waiting for the Orange Poppy Seed Muffins to be freshly baked.
Whenever I spotted them I indulged and adored the delicious muffin flavor. (Yes, I’ve always LOVED my food and obsessed over it, even back then!)
I’ve always preferred moister muffins to cakey muffins so when I adapted this recipe I significantly reduced the flour volume and it suits my tastes perfectly. If you prefer a more cakey muffin, then increase the flour volume to two and a half cups.

These muffins disappeared the day they were made which is a good sign of a successful baked treat!
