This grain free granola recipe is so deliciously addictive! The whole family have been adoring sprinkling it over yoghurt for a tasty treat.

You don’t miss the grains/oats at all – it’s truly nourishing and filling on it’s own.

 

Regarding the dish you cook the granola in – I always prefer to use a large baking dish (like this one) to cook granola in. It’s a practical option as it avoids the potential for granola to stick to a baking tray or baking paper. It always works well for me so that’s simply what I do!

1 Cup Crushed Walnuts
1 Cup Almonds
1/2 Cup Crushed Cashews
1/2 Cup Dessicated Coconut
1/4 Cup Almond Flour
1 teaspoon Cinnamon
Pinch of Salt
1/2 Cup Coconut Oil, melted
2 Tablespoons Maple Syrup or Raw Honey
1/3 Cup Cranberries/Sultanas/Raisins

1. Preheat the oven to 100C/250F and get out a large baking dish.
2. Combine the walnuts, almond, cashews, coconut, almond flour, cinnamon and salt together in a large bowl.
3. Mix the maple syrup into the melted coconut oil.
4. Pour the coconut oil mixture over the nut mixture and stir until well incorporated.
5. Place in the preheated oven and cook for an hour, removing from the oven every 20 minutes to give the granola a stir to prevent burning and to ensure all sides become golden.
6. Add the cranberries/sultanas/raisins in the final 20 minutes.
7. Remove from the oven and allow to cool without mixing the cooked granola. This will ensure granola clusters are formed on cooling.
8. Once completely cool, remove and store in a sealed container.

This Grain Free Granola is perfect covered in milk or as a topping for yoghurt or even ice cream.
