30 Days Of Vegetables For Kids

With the end of the year fast approaching (seriously, where did 2015 go?!) I’ve been reflecting back on my New Years resolutions. One of which was to eat more vegetables. I’ve kind of sucked at that resolution through the year. You know how it is – you get stuck in a rut of serving the same old vegetables to your family, you get in a sort of veggie comfort zone. Well, there are still a couple of months left of 2015, so rather than wait until 2016 I’m taking action NOW.

I’ve been trying to think of a way to get myself out of this rut and I came up with a really fun solution…

I’m so excited to share this challenge with you – through the month of November I’m going to serve my kids 30 days of vegetables and I’ll share all with you here on my blog, on Facebook and Instagram.

We’ve been in a bit of a cucumber/carrot rut lately/forever and I’ve been conjuring up a plan to broaden our vegetable horizons.

I’m going to try for as many different vegetables as I can through the month, but won’t go crazy if I serve the same vegetable more than once – I’m just going to strive to find different ways to serve them.

The plan is to look through blogs and cookbooks with my kids and then shop for a rainbow of vegetables to prepare in different ways.

How can you follow along? There are no “rules” – no matter your eating requirements/allergies/tastes, just challenge yourself to try new vegetables with your family, or re-visit vegetable recipes you haven’t enjoyed in a while. Eat a rainbow of vegetables through the month and just enjoy the challenge!
