Sweet Potato Cottage Pie

Sweet Potato Cottage Pie is a delicious variation on the classic cottage pie. It’s our preferred way to enjoy the dish as the flavours just work together so very well.

I made this as part of week 3 of 30 Days Of Vegetables For Kids as I hadn’t made it for a while and was not dissappointed with the results.

Here’s how to make Sweet Potato Cottage Pie. You’ll need:

  • 1 Kilo/2.2 Pounds Sweet Potatoes
  • 1 Tablespoon Coconut Oil
  • 1 Onion, peeled and finely chopped
  • 500g/1.1 Pounds Beef Mince
  • 500g vegetables of your choice (one or a mix of diced mushrooms, carrots, celery, peppers)
  • 1 tin of Tomatoes
  • Salt and seasoning to taste (we love ground coriander!)
  1. Peel and chop the sweet potatoes. Place in a saucepan, cover with water and place over medium to high heat. Bring up to the boil and simmer until the sweet potatoes are soft enough to easily mash. Once the sweet potato has softened, drain and mash to a soft and creamy texture.
  2. Meanwhile, heat the coconut oil in a separate saucepan over medium heat. Add the onion and cook until softened.
  3. Once the onion has softened add the beef mince.
  4. Cook until browned all over then add the vegetables and tin of tomatoes. Mix well and add a tin full of water or two to submerge all of the ingredients.
  5. Allow the meat to bubble away for 25 to 30 minutes or until cooked through and reduced a little.
  6. Preheat the oven to 180C/350C.
  7. Once the oven has reached the temperature place the cooked mince mixture into a large baking dish. Top with the sweet potato mash.
  8. Place in the preheated oven and cook for 30 to 35 minutes or until cooked through browned to your liking.

  • Fried eggs with spinach, cucumber and tomatoes
  • A giant bowl of orange tomatoes
  • A veggie platter with cucumber, carrots and tomatoes
  • Noodles cooked in coconut milk with onions and mushrooms
