I’ve been low carbing it for over a week now and have been LOVING experimenting with different low carb flavour combinations for meals, snacks and sweets. I’ve made this Easy Egg Salad Recipe as a snack a number of times through the week.

I always have a bowl full of hard boiled eggs in my fridge to use in various snacks and meals and this one has been on repeat. I love sharing recipes like this to inspire you as well as inspire my future self, when I’m stuck for snack ideas myself and inevitably turn to my own blog (sad, I know!) because I can’t quite remember the ratios of one recipe or another!

This salad is a great snack in a bowl at home or popped into a container and taken for a snack on the go. (Just don’t keep it out the fridge for too long!)

Easy Egg Salad Recipe

  • 1 Hard Boiled Egg, Sliced
  • 1 Celery Stick, diced
  • 1 Tablespoon Sour Cream
  • 1 teaspoon Flax Seeds
  • Generous Pinch of Salt
  1. Place all of the ingredients into a bowl or container, if you’re making it to take away, and stir until well combined.
  2. Eat and enjoy!

This salad couldn’t be easier and of course you could adapt it to suit your own tastes and dietary requirements – using mayo instead of sour cream if you’re avoiding dairy and feel free to swap the celery for your veggie (or veggies) of choice.
