Keto Low Carb Day Of Eating and Meal Prep Diary and Video

I’m a week into my Ketogenic/Low Carb way of eating and I decided to document another Low Carb Day Of Eating. (Click here for last week’s edition.)

Here’s an overview of what I ate, and make sure you watch the video below where I talk you through my meals in more detail.

Breakfast

Open omelette which I filled with sour cream, spinach, green beans, Persian Feta and Sour Cream. I then rolled it up and it was a wonderfully nourishing breakfast.

Lunch

We found ourselves out at lunch time and thankfully the food store we found ourselves in has lots of low carb friendly options so my Husband and I filled a container with macadamia butter chicken and beautifully cooked cauliflower to share for lunch.

The lunch was so flavourful and I was grateful to have such a delicious low carb option while out and about.

Snack

I had a handful of flaked almonds while I was out and about to keep me going until lunch.

While meal prepping in the afternoon, I tried a couple of the crispy salami slices as my snack. They turned out perfectly crispy and make the ultimate salty snack.

Dinner

For dinner I made Bolognese stuffed lettuce cups. I cooked mince in the lowest carb tomato sauce I could find, along with onions, garlic, zucchini and mushrooms. Once the sauce had reduced to my liking I took it off the heat and filled lettuce cups. This would also be great topped with a dollop of sour cream, grated cheese or Parmesan.

Sundays are usually my meal prep day. I like to keep my fridge stocked full of ready prepared items to make it easy to put together meals or snacks through the week. This week my meal prep included:

  • Hard boiling eggs
  • Making crispy salami (Watch the video below to see how I made them!)
  • Turmeric Cauliflower Salad
