Easy Keto Meals - Full Day of Low Carb Ketogenic Diet Eating

Now that I’m 6 weeks into my Keto Diet Journey I have a routine in place and meals that I turn to (and tweak) to make life easy. So, I filmed a day of Easy to prepare meals that require no time at all and are all low carb/Keto friendly. You can enjoy these even if you’re not following a low carb diet!

Breakfast

Admitedly most of my breakfasts include egg of some description and this day was no exception. I chose to scramble the eggs with sauteed asparagus for flavour and fibre. You could also top the finished dish with feta, parmesan and salt to taste. (Click here for 7 Breakfast Ideas!)

Snack/Dessert

As often happens, I had been toying with the idea for an Avocado chocolate mousse/pudding. So, I decided to experiment with ingredients and I was pleased with the results, but need to keep tweaking! If you’re after what I did (which is a recipe in progress…) Here are the ingredients :

  • 2 Tablespoons Mascarpone
  • 1 TB Cream
  • 1 tsp Cacao
  • 1/2 tsp Psyllium
  • 1/2 Avocado
  • 1/2 tsp sweetener

Mix/Blend/Beat the above ingredients until smooth. Then, enjoy straight away or refrigerate to thicken. It tastes delicious but I want to keep tinkering to get it perfect… I’ll share the finished recipe with you soon… (Hopefully!)

Lunch

Easy Keto Meals Lunch

Most days I have a salad of some description for lunch. If we have leftover chicken/meat then I’ll turn that into a salad or made a hard boiled egg or tuna salad.

Another favourite is Halloumi. Grilled/Fried halloumi makes a delicious protein/fat inclusion in a salad. In this instance I made a big Halloumi Salad with spinach, cucumber, celery and a drizzle of olive oil and apple cider vinegar. It’s full of gorgeous greens and the deliciously salty flavour of Halloumi.

Dinner

Easy Keto Meals Dinner

I adore one pan dishes and this Cauliflower/Chicken dish is the perfect example of that.

I cooked a package of Chicken Sausages, serving a couple to my kids and then chopping the rest into bite sized pieces and cooked them with cauliflower, garlic and a generous pinch of salt. I Added paprika on a whim and it turned out wonderfully.

You could enjoy this dinner dish as is or top with a portion of Parmesan, feta or your cheese of choice.
