It wasn’t too long ago that I shared my favourite way to enjoy Roasted Bone Marrow. Well, that way usually involved topping sourdough toast with the roasted marrow. You can watch it here, if you haven’t already:

I’ve been craving roasted bone marrow lately, but as I’m on the Keto Diet and sourdough is just WAY to high in carbs to be included in my meals, I’ve been racking my brain, trying to come up with a Keto friendly way to enjoy Bone Marrow sans toast.

The solution? Filling a plain omelette with the roasted bone marrow and a couple of other nourishing ingredients for enhanced flavour and to balance the rich marrow taste.

The results? A delicious, Low Carb, Keto Diet friendly way to enjoy roasted bone marrow, you almost don’t even miss the sourdough!

I served this as an indulgent breakfast the other day, but you could just as easily make it for lunch or dinner if you’d prefer.

A side note – the fat/oil which is released while roasting the marrow bones makes an AMAZING cooking fat. Once the roasting dish has cooled, pour the liquid into a jar or mug, store in the fridge and use in the place of butter/oil/coconut oil for frying.

Keto Bone Marrow Recipe

  • Marrow Bones
  • Eggs for making omelettes (I like a dash of cream in mine!)
  • Spinach or other greens
  • A Lemon or Lime
  • Olive Oil
  • Salt & Pepper to taste
  1. Preheat the oven to 200C/400F and get out an oven proof dish.
  2. Place the marrow bones into the dish and place into the preheated oven.
  3. Cook for 15 to 20 minutes or until cooked and marrow is meltingly tender.
  4. While the marrow bones are roasting, prepare your omelettes following your favourite omelette recipe.
  5. Once the marrow bones are cooked remove from the oven.
  6. Remove the marrow from the bones and top the prepared omelettes.
  7. Top with a handful of spinach, squeeze over a little lemon/lime, drizzle over olive oil and a pinch of salt and pepper to taste.
  8. Roll your omelette or serve open.
