This recipe is a collaboration with Keto Connect. We each chose 3 ingredients, popped them into a hat and then I picked out the 3 ingredients we would each be cooking with. These are the 6 ingredients we chose between us:

  1. Mustard
  2. Asparagus
  3. Chicken Thighs
  4. Mushrooms
  5. Sour Cream
  6. Eggs

I put all of the ingredients into a hat and picked out:

  1. Asparagus
  2. Mustard
  3. Mushrooms

So, we each had to create a low carb, keto recipe using the above 3 ingredients. My recipe is below!

I decided to keep it a veggie dish and as close to the 3 ingredients only as possible, only adding a couple of ingredients to complete the dish.

What I really loved about this challenge was that it pushed me out of my comfort zone. I’d never really experimented with mustard before and creating this dish has inspired me to have a play with the ingredient in future.

Keto Recipe – Asparagus, Mustard and Mushrooms

Keto Recipe Mystery Challenge - Collboration with Keto Connect - with recipe and video using 3 low carb keto diet friendly ingredients.

  • 1 Bunch Asparagus, Cleaned and woody bottoms removed
  • 1 Cup Mushrooms, Sliced
  • 3/4 teaspoon Mustard
  • 1 Tablespoon Mascarpone Cheese
  • 1 Tablespoon Cream
  • Butter, for frying
  • Salt, to taste
  1. Melt butter in a large frying pan.
  2. When hot, add the asparagus, a shake of salt and cook until softened.
  3. Remove the asparagus from the pan to a plate when cooked.
  4. Add the mushrooms into the frying pan, adding more butter and salt if needed.
  5. Cook the mushrooms until reduced and cooked.
  6. Top the cooked mushrooms with mustard, mascarpone and cream.
  7. Stir through and cook for a final minute or until the mushrooms are bubbling and cooked to your liking.
  8. Pour the mushroom sauce over the asparagus and serve.
