Creamy Mushroom and Cauliflower Risotto Recipe (Low Carb, Keto Diet)

This Cauliflower Risotto Recipe is SOOO good – it tastes like the real thing yet is Low Carb Ketogenic Diet friendly. It’s an excellent veggie friendly low carb dish to include in your weekly meals.

You could use your food processor to rice your cauliflower, as you’ll see in the video below, I prefer to use a box grater to create my cauliflower rice.

As you’ll notice in the recipe, I don’t give exact quantities as it depends on how many people you’ll be serving (and how hungry you’ll be!). Use the recipe as a guide to create your best low carb cauliflower risotto ever – with no rice!

Regarding the liquid, my preference is 50% Cream and 50% Almond/Coconut Milk, in this instance is was 1/4 cup of each. To make up your liquid you could also use stock, broth, canned coconut milk, water or even wine if you include it in your diet.

This dish is meat free, but you could easily add chicken, chopped salami or your meat of choice to create a meaty Cauliflower Risotto.

Creamy Mushroom and Cauliflower Risotto Recipe

  • Cauliflower
  • Garlic Cloves, sliced
  • Sliced Mushrooms
  • 1/4 to 1/2 Cup Liquid (Mix of your choice from Milk/Cream/Stock/Broth/Water)
  • Butter/Coconut Oil, for frying
  • Parmesan for topping (optional)
  1. Rice the cauliflower either in a food processor or with a box grater.
  2. Heat a little coconut oil or butter in a frying pan over medium to high heat.
  3. When hot, add the garlic and mushrooms.
  4. Saute until reduced.
  5. Add the cauliflower and your liquid of choice.
  6. Simmer gently, stirring regularly until the cauliflower is cooked through.
  7. Remove to bowls and top with (optional) Parmesan.

Ingredients

  • Cauliflower
