Example Low Carb Day – Full Day Of Keto Diet Eating
In a couple of days I’ll achieve my 6 month Ketogenic Diet milestone. I’ve gushed about this diet for most of the 6 months I’ve been following it – the food is AWESOME, I’m never hungry and I have more energy than I’ve had in YEARS.
Today I’m sharing an example low carb day with you:
Eggs usually appear in some form for breakfast. In this instance I sautéed mushrooms and salami until softened/crispy and then added a few whisked eggs to create a hearty breakfast scramble.
Lunch usually consists of a salad of some description. In the example low carb day I had a BIG green salad which included:
- Greens – lettuce/spinach
- Avocao Oil
For my mid afternoon snack I had a bowl of coconut yoghurt with strawberries and chia seeds. When shopping for yoghurt, compare what you find and aim for the lowest carb content.
Many low carbers don’t include chia seeds in their diets. I’m clearly not one of them! I include a portion most days as it’s packed full of nutrients and rich in fibre. It doen’t knock me out of Ketosis and I feel great including it in my diet. Experiment for yourself and see.
Dinner was simple roasted chicken with cucumbers and sour cream. I usually roast a whole chicken and an extra package of legs/drumsticks so there’s heaps of leftovers. (Plus all 4 of us enjoy the drumstick the most – so I make sure there’s plenty of them to go around!)
