Mushroom Soup Recipe

I’m working towards including less dairy loaded recipes in my diet. So, I’ve been experimenting with incorporating more dairy free meals in my days and this soup is one of the delicious results of that experimentation.

You seriously don’t miss the creaminess of a dairy cream/milk based soup, the richness of coconut milk does the creamy job perfectly.

Note that I don’t count the oil/seasoning as ingredients because you can use whichever you like, or omit them altogether. The basic 4 ingredients are what you need to source to make this recipe. Then, have fun and make it your own!

Mushroom Soup Recipe

  • 250g Mushrooms
  • 2-3 Garlic Cloves
  • 400ml Coconut Milk
  • 400ml Chicken Stock/Bone Broth
  • Butter/Coconut Oil for frying
  • Salt/Pepper/Seasoning/Herbs to taste
  1. Dice the mushrooms and garlic cloves.
  2. Heat the butter or oil in a saucepan.
  3. When hot add the diced mushrooms and garlic.
  4. Saute until reduced and softened.
  5. Once reduced, add the coconut milk and stock.
  6. Bring up to a simmer and cook for a few minutes to allow the flavours to develop.
  7. Once cooked to your liking serve. You can puree/blend the soup for a smooth texture.

Ingredients
