Roasted Broccoli Recipe with Garlic and Lemon

There are many versions of this recipe floating around. I adapted the basic ingredients to ensure the salad is low carb, high fat friendly.

Pine Nuts are pretty much one of the most perfect Keto friendly foods. The macros are almost exactly what you should be consuming on a low carb diet. Aside from the fat benefits, pine nuts bring an awesome crunchy texture to any dish.

Roasted Broccoli Recipe

  • 2 Head of Broccoli
  • 3 Garlic Cloves
  • 3 Tablespoons Coconut Oil/Avocado Oil/Olive Oil
  • Salt & Pepper to taste
  • Juice of 1/4 Lemon
  • 3 Tablespoons Pine Nuts
  1. Preheat the oven to 200C/400F and get out a baking tray.
  2. Chop the broccoli into bite sized pieces and place into the baking tray.
  3. Peel and crush the garlic over the broccoli.
  4. Drizzle over your oil of choice and add salt & pepper to taste.
  5. Toss to combine well.
  6. Place into the oven for 15-20 minutes, tossing it half way through cooking. Watch closely that it doesn’t burn.
  7. Remove from the oven, allow to cool slightly then stir squeeze over the lemon juice and toss through the pine nuts.
  8. Enjoy warm or as a cool salad.
