First Day On Keto Meals

On Monday I started back strictly with the Ketogenic Diet. I’ve previously lost 16kg/32lbs following the diet, took a 6 week break and have been keen to get back onto it. I documented all of my meals and snacks to share what my first day back looked like.

So, here are all the meals I enjoyed on my First Day On Keto – Round 2!

Breakfast

I wanted to start with a super low carb breakfast, to give me wiggle room for the rest of the day. I went for a Cheese Omelette and Hot Chocolate/Cocoa mixed with butter.

To make a cheese omelette, whisk together 2-3 eggs and 2 tablespoons of eggs per person. I was making for myself and my Husband so whisked 5 eggs and 4 tablespoons of cream together.

Heat butter or coconut oil in a large frying pan and when hot add in your whisked egg mixture.

Fold in the edges and add grated cheese when ready. Fold over the omelette and enjoy!

Morning Snack

The day before I started Keto I did a MASSIVE Sunday Meal Prep session. It made it easy for me to have ingredients at the ready for meals and snacks. My morning snack was put together from my Sunday Meal Prep – Corned Beef Silverside, Celery and Mayo. Just a simple snack that saw me through until lunch.

Lunch

I find that for lunches on Keto I usually have a salad or lettuce cup wraps. For my first day lunch I had a big plate of greens – lettuce cup wraps with a hard boiled egg, avocado and mayo.

Afternoon Snack

If you’re a regular reader, you’ll know that my afternoon snack staple is strawberries and cream! Most days on Keto I enjoy 4 or so strawberries and cream and my first day back was no exception.

I find that strawberries and cream is something I look forward to each afternoon and keeps my sweet tooth at bay.

Some Keto followers prefer not to include strawberries or any fruit in their diet. Make up your own mind and do what works for you.

Dinner

For dinner I made a Cauliflower Concoction by sauteeing cauliflower and mushrooms in heaps of butter and a generous sprinkling of turmeric. Once it was all cooked to my liking, I stirred through a few tablespoons of cream and brought it up to the boil.

It was such a deliciously nourishing way to end my first day back on Keto.

How I Track

Most Keto Diet followers track their macros using an app or website. I prefer to go old school and use a notebook and pen to track my carbs only.

I meticulously wrote out all the net carb values of all my favourite foods in the front of the notebook. Then each day I keep a sort of diary of meals through the notebook. I talk you through my process in the video below.

Feel free to use an app if you find it easier.

Once I’m back into the Keto swing of things, I won’t be tracking any longer. It’s just to get used to net carbs in foods again. I drive myself crazy when tracking every single meal of every single day and so didn’t track for most of my Keto Journey.

How Do You Know If You’re In Ketosis?

Ketosis is what we are aiming for with the Keto Diet as it means we are in full fat burning mode.

The easiest way to check whether you’re in Ketosis is with Ketone Strips. I started measuring from first thing in the morning on the first day and a few times a day for the next few days, so I knew exactly when I got into Ketosis. Once in Ketosis, I find that I only measure every so often, if I feel that I may be out and want to check I’m still in.
