Keto Chocolate Cheesecake Brownies With Cream Cheese and Coconut Flour

Chocolate Cheesecake Keto Brownies

These coconut flour keto brownies will satisfy your chocolate cravings while being naturally low in net carbs.

I’m a MASSIVE Nigella Lawson fan. I have pretty much every single one of her cookbooks and I have cooked from them for as long as I’ve been married (over 11 years now).

There are some Nigella recipes I’ve cooked since early in my marriage that have always been a hit with all who’ve tried and I just know they work every time.

One of which is a carb full version of this chocolate cheesecake cream cheese brownie recipe. Out of no where I started thinking of this recipe recently. (Well, I guess I often think of chocolate brownies…)

Whisking brownie batter together

And, I wondered if I could tweak the regular flour to coconut flour and regular sugar to stevia to convert the regular brownies to be keto diet friendly but still just as good.

I set about creating a couple of batches, tweaking the ratios to create the perfect low carb chocolate cheesecake cream cheese keto brownies.

By the way, the original recipe comes from How To Be A Domestic Goddess.

My copy has chocolate and brownie batter smears on every other page, it’s that loved and used.

Now that I’ve managed to adapt the delicious brownies to be keto and low carb friendly, I’m going to work through the book and adapt some other favourties too.

Keto Coconut Flour Brownies Recipe Notes:

Only a quarter of a cup of coconut flour is needed in the easy recipe to create delicious keto brownies. Coconut flour can be a really tricky ingredient to cook with. So, it’s best to whisk coconut flour into the mixture a tablespoon at a time, to give it time to absorb the liquid and mix properly with the brownie batter.

If you find that the mixture is still too wet add another tablespoon of coconut flour at a time. If you find it too dry then add an extra egg or a few spoons of almond milk or heavy cream.

Regarding the chocolate, if you’re aiming for lowest possible carb content then go for 90% + dark unsweetened chocolate or sugar-free chocolate chips and then add sweetness to taste. You could also add in a couple of tablespoons of unsweetened cocoa powder or cacao powder for an even richer chocolate flavor in these perfect keto brownies.

Stevia for keto brownies coconut flour cream cheese cheesecake

I have used Stevia in the dry ingredients as it’s the low carb sweetener that agrees most with me. Feel free to sub in your sweetener of choice.

I personally found that 2 tablespoons was sweet enough but tested up to 1/4 of a cup of stevia, which made the keto cheesecake brownies a lot sweeter.

If you’d like to add even more chocolate to your sugar free coconut flour brownies, then why not frost them with low carb chocolate frosting?!
