Salmon Patties

I’m always looking for ways to include more fish in our regular diet, in addition to favorites like Fish Poached in Milk or this yummy Tuna Gratin. So, I bought a tin of Wild Alaskan Pink Salmon and went on the hunt for some inspiration. After a little searching, I found a recipe for the popular Jewish Dish “Gefilte Fish” in The Book of Jewish Food by Claudia Roden – a cookbook I adore and refer to regularly for inspiration and advice on traditional techniques and recipes. Inspired, I adapted the recipe to incorporate my tin of Wild Alaskan Salmon.

My Husband says these Salmon Patties are ALMOST as good as his Mothers – and his Mother is a sensational cook so I take that as a HUGE compliment. These Salmon Patties are pretty close to perfection.

The Salmon Patties were met with mixed reactions from the boys. Mr 4 who LOVES smoked salmon only nibbled at his (remember he is a slowly reforming fussy eater, so I am just thrilled that he tasted the patties!), whereas Mr 2 couldn’t get enough of them. He kept asking for more and absolutely adored every mouthful.

Here the Salmon Patties are served in a Bento Lunch, along with apples, tomato, corn and a Star Cup full of homemade veggie soup. The boys always love seeing which Animal Food Picks appear in their meal each day and we usually chat about what the animals are and the noises they make through the meal.

Salmon Patties
Adapted from The Book of Jewish Food by Claudia Roden
415g (14.63 ounce) Tin Wild Alaskan Pink Salmon
1/2 Onion, grated
1 Egg
2 Tablespoons Matzo Meal (or breadcrumbs, gluten free if need be)
Salt & Pepper to Taste
Oil, for frying

1. In a large bowl, combine all of the ingredients together.
2. Cover the bowl and refrigerate for half an hour for the mixture to set.
3. Form the mixture into 16 patties. I divide the mixture into 4 equal balls and then divide each quarter of the mixture into 4 to make 16 equal patties.
4. Heat a little oil in a large frying pan and, when hot, fry the prepared patties until golden on each size. Depending on the size of your frying pan, you may need to fry the patties in batches.

Makes 16 Salmon Patties
