Berry Tea Cake

The first time I made this Berry Tea Cake for the kids a while back, my 4 year old liked it so much that he asked if I’d please make it for his upcoming 5th Birthday! Could have just been the sugar talking, but this cake is so simple, yet sweet and berry-licious that I want it for my Birthday Cake too!

This cake is not going to win awards for it’s appearance! It’s a simple cake but one which is full of flavor.

Berry Tea Cake
Adapted from Women’s Weekly Sweet Old Fashioned Favorites
60g Unsalted Butter, softened
1 teaspoon Vanilla Extract (where to find vanilla extract)
1/2 Cup Raw Sugar (where to find raw sugar)
1 Egg
1 Cup Unbleached Plain Flour (where to find unbleached plain flour)
1 teaspoon Aluminium Free Baking Powder (where to find alumiunium free baking powder)
1/3 Cup Milk
3/4 Cup Frozen Organic Berries

1. Preheat the oven to 180 and grease a small cake tin.
2. In a large bowl, beat the butter, vanilla, sugar and egg together until smooth.
3. Sift the flour and baking powder over the cake batter.
4. Pour over the milk and mix the cake batter until well combined.
5. Lastly mix through the berries. As I prefer to use frozen berries, I like to crumble some of the berries into the batter so that the cake is dotted with berries in every corner.
6. Place the cake batter into the prepared tin and bake in the preheated oven for 25 to 35 minutes or until golden and cooked through.

This cake is truly delicious just as it is, but if you like you could drizzle a little cream over the top for a little extra pizzazz!
