Happy New Year! Feeling rested and refreshed – today is my first day back blogging after a 10 day break. Over the break I’ve had heaps of fun making noodle creations with my vegetable spiralizer… the absolute hit were these Broccoli Spiralizer Noodles. They’re a fun and tasty gluten and grain free noodle alternative!

The fact that they were made on a complete whim and that my non broccoli eating 5 year old couldn’t get enough of these makes these spiralized delights even more of a success!

To make Broccoli Spiralizer Noodles you need a Vegetable Spiralizer. (Where to find a vegetable spiralizer)

This is the one which we have and which I absolutely adore and highly recommend:

Once you have your handy spiralizer in your possession, you need a head of broccoli, preferably one with a long stalk.

Clean and trim your stalk to make the noodle making process a breeze.

Next, place your stalk into the spiralizer. I used the small hole attachment and find it makes slinky long noodles!

Churn out your noodles, trimming as you go so that you don’t end up with noodles as tall as your children! (though from time to time my kids love super duper long noodles!)

You can enjoy your Broccoli Spiralizer Noodles raw or you could steam, fry or boil them as desired.

My kids enjoyed them raw as a side to their dinner and I heated the adult’s portion in a stew of chicken and broccoli – heating in the last few minutes of cooking – perfect!

An added bonus of this meal – more often than not we actually throw away the broccoli stalks (naughty I know!) and so this vegetable delight is made from an ingredient which I’d usually throw away! How cool is that?!
