These banana pancakes are just so easy to make, you only need TWO ingredients – a really ripe banana and 2 eggs.

I know it’s hard to believe that you can achieve fluffy pancakes with just these two ingredients, but trust me – you can and they are DELICIOUS!

I’ve been making these pancakes (which have been floating around the Internet for eons) for AGES and felt it was about time to share the simplicity with you.

Here’s how you make these easy banana pancakes. You’ll need:

  • 1 Ripe Banana
  • 2 Eggs
  1. Mash the banana in a large bowl until it’s smooth.
  2. Add the eggs and beat until smooth and bubbly. You can use a fork, whisk, beater or even a blender to combine.
  3. Heat a little oil or butter in a large frying pan.
  4. When hot drop 2 tablespoons of batter per pancake.
  5. Cook until bubbles appear on the surface and then flip and cook through on both sides.
  6. Remove to a plate, serve as is or top with ice cream, cream, maple syrup or any other yummy pancake topping.
