I’ve been making this SOOOO many times over the past couple of months. It’s always a welcomed meal that’s tasty and nourishing.

It couldn’t be simpler to make this dish, it only takes a few ingredients…

Mushroom Carbonara Pasta Recipe

Here’s how you make it:

  • 500g Mushrooms, washed and sliced
  • 1 Onion, finely sliced
  • 250g pasta – fettucine, taglietelle etc.
  • 2 eggs, beaten
  • 1/2 Cup finely grated Parmesan (parmiagiano reggiano)
  1. In a frying pan, fry the sliced mushrooms and onions until softened and reduced.
  2. Cook the pasta according to the packet instructions. Once cooked, drain and reserve about half a cup of cooking water.
  3. Combine the eggs and parmesan together in a bowl.
  4. Pour the cooked pasta and reserved cooking water over the mushroom mixture and toss to combine.
  5. Finally, pour the eggs and parmesan over the pasta and quickly stir through.
  6. Serve immediately, topped with more parmesan if you like.
