Low Carb Cauliflower Casserole

Today I’m sharing a super easy low carb cauliflower casserole which is so cheesy and tastes somewhere between a potato au gratin and mac and cheese. But, it’s low in net carbs and keto diet friendly.

The baked cauliflower casserole is infused with a simple cheese sauce that’s always a hit with the whole family, even my picky eaters. This is an especially perfect comfort food meal for busy weeknights and is one of our all time favorite recipes.

You can enjoy the fresh cauliflower casserole as a main dish full of cheesy goodness or as the perfect side dish for your holiday table.

4 Ingredient Easy Cheesy Low Carb Cauliflower Casserole Recipe & Video

This low-carb diet recipe has been kept simple with just 4 ingredients. Feel free to add to it though with ingredients to taste. Here are some ideas:

Fresh Veggies – chopped and sauteed garlic, broccoli, green onions or mushrooms

Loaded cauliflower casserole – chopped salami, rotisserie chicken, bacon pieces, bacon bits, or leftover ham

Cheese options

Extra cheesy cauliflower casserole – cream cheese, feta, parmesan cheese, sharp cheddar or mozzarella

Seasoning – salt, black pepper, garlic powder, onion powder, mustard or cayenne pepper

Low Carb Cauliflower Casserole Recipe

  • 1 Head of Cauliflower, chopped into small pieces
  • 1/2 Cup Sour Cream
  • 1/2 Cup Heavy Cream
  • 1 Cup Grated Cheddar Cheese
  1. Preheat the oven to 180C/350F and get out an oven proof baking dish.
  2. Bring a pot of water up to the boil and cook the cauliflower florets for 5 minutes over medium heat.
  3. Once cooked, drain the cauliflower and place into the oven proof casserole dish.
  4. Pour over the sour cream and cream.
  5. Stir to combine the creamy sauce with the cooked cauliflower.
  6. Mix through 1/2 cup of cheese.
  7. Top with the other 1/2 cup of remaining cheese.
  8. Place into the preheated oven for 15-20 minutes, or until cooked through and golden.

Easy Low Carb & Keto Diet Dinner Idea - 4 Ingredient Cheesy Cauliflower Casserole.

Ingredients

  • 1 Head of Cauliflower, chopped into bite sized pieces
  • 1/2 Cup Sour Cream
  • 1/2 Cup Cream
  • 1 Cup Grated Cheese

Instructions

Preheat the oven to 180C/350F and get out an oven proof dish.
