Red

There were both Truss tomatoes and cherry tomatoes included in my rainbow of vegetables. The truss tomatoes were incorporated into sandwiches and salads through the week.
The cherry tomatoes were used in the fun grape and tomato kebabs I shared last week.

Orange

Carrots and onions were roasted along with chicken and potatoes.
Yellow

In addition to snacking on Bananas through the week, I also made a batch of banana pancakes. This particular banana pancake looks a lot like an apple for some unexplainable reason!

Green

The celery was simply snacked on through the week. My 4 year old and I are the only celery eaters in the family and we both happily snack on a stick or two a day.
Lately our go to after dinner snack is a cup of grapes. I also popped grapes onto kebabs with tomatoes. (as seen above)

Grain Free Cheesy Eggplant Chips

I made Grain Free Cheesy Eggplant Chips with the eggplant and it was a huge hit as always!
It was a really interesting task documenting how the rainbow of vegetables was used through the week. It’s inspired me to explore more new fruit and veggies of every colour of the rainbow!
