If you Follow Me On Pinterest, you’ll notice that I’ve been going a little crazy pinning pumpkin recipes onto my Pumpkin Pinterest Board. You know what it’s like, you start your pinterest session browseing and then, very quickly, become dragged from one direction to another before becoming completely fixated on one ingredient or recipe, and finding loads of variations… or maybe it’s just me!

Anyways, my Pumpkin Pinning helped me come to an important revelation – I have yet to serve the kids Pumpkin French Toast… I’ve served them virtually every other French Toast Recipe imaginable – Banana Bread French Toast, Orange French Toast, Baked French Toast With Apples & Cinnamon, French Toast Kebabs and the list just goes on and on!

Inspired, I cooked up a piece of pumpkin, mashed it to a puree and made a simple pumpkin french toast batter.

The resulting pumpkin french toast was sweet and perfectly pumpkin-ey! (If there’s such a word!)

It’s been a while since I put together a muffin tin meal for the kids, so I served the pumpkin french toast, together with cooked pumpkin pieces, in a muffin tin meal.

The meal was decorated with some cute food picks which the kids enjoyed.

Pumpkin French Toast Recipe

Pumpkin French Toast Recipe - Easy breakfast ideas
Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 2 Eggs
  • 1/3 Cup Pumpkin Puree
  • 2 Slices of Sourdough Bread
  • Coconut Oil, For Frying

Instructions

  1. Beat the eggs until smooth.
  2. Mix the pumpkin puree through the beaten eggs until well combined.
  3. Dip the bread slices into the egg mixture until each slice is well coated and the batter is soaked through.
  4. Heat coconut oil in a large frying pan and, when hot, place the soaked bread into the frying pan.
  5. Cook until cooked through and browned on both sides.
